Stylish Seafood Cucumber Appetizer

I found this easy to create with lots of style appetizer from Eddie Ross. Simply peel and slice cucumber about 1/2" thick and cut with a fluted cookie cutter. Scoop out the center with a melon baller creating these cucumber cups.

Fill with pre-made lobster or favorite seafood salad.

Garnish with fresh chopped mango and bamboo mini forks...fancy! I found these bamboo forks at Target next to the toothpicks. Great to use for many appetizers and nicer than a toothpick!
