I don't have an exact recipe, so I will estimate what I used here.
7 larger sized redskin potatoes - sliced thin so they cook well
1 medium onion sliced
About a cup of Gorgonzola cheese
Salt and pepper to taste
Slice up potatoes and onion, salt and pepper to taste and top with the Gorgonzola cheese. I use a large piece of foil - the kind you can buy at Costco, so I can wrap everything up well. This time I placed an extra piece of the non-stick foil on the bottom center to help with sticking when it is cooked. I find that when I have a large amount of potatoes, when I am serving it for a party, that they need to be in the oven about 1 1/2 hour at 350 to make sure the potatoes in the center are cooked. The ones on the outside want to stick to the foil - problem solved!
If you have a smaller amount of potatoes I would only cook this for about an hour at 350.
That's it - and so good!

ReplyDeleteStephanie Lynn - these are very yummy. I have not tried grilling them. I find they take some time to cook through so that all the potatoes are cooked - I think they would be on the grill a long time. Maybe it would work to do small individual servings!
