How did I come up with this one. My son has disabilities with feeding issues. We are trying to expand what he will eat. So I cooked up a couple of heads of cauliflower, pureed it in a large pot and here is the secret ingredient...cheese. You don't need a lot. I used Velveeta cheese so that it would not be stringy. No butter or milk- just make sure you drain the cauliflower well so it is not watery. Even my 16 year old daughter thought these were pretty tasty!

Delicious & Healthy Mashed Potatoes
This is a great and unbelievably delicious substitute for mashed potatoes. What is it?...pureed cauliflower. I know, you are probably thinking yuck! If you have kids who need to get a little more veggies...this is perfect. They may never notice that they are not eating real mashed potatoes. Or if your on a diet...a great carbohydrate substitute!

Cook cauliflower, drain well and puree. Add cheese to taste. So easy!

As someone who has eaten my share of mashed cauliflower, I can totally 100% agree that it is delicious - IF done properly. Looks like you do it right!

ReplyDeleteThat sounds delicious! I've cooked half cauliflower and half potatoes (not sure how my kids would like it), but I think I'm ready to skip the potatoes next time.
ReplyDeleteI love this too! I started out using half potatoes and half cauliflower and then using less and less potatoes. I make just as you would mashed potatoes, but so much better for you! (Don't tell your kids...just let them discover that they like it on their own!)
